Rice Salad with Garlic

This versatile, easy and very delicious recipe is compliments of Nella, a Torontonian of more than 80 years.


  1. 4 cup cooked rice, cooked in a chicken or vegetable stock base

  2. ¼ cup Garlic Vegetable/Salad Splash

  3. 2 TBS minced onion

  4. 1 cup diced celery

  5. 1 tsp curry powder

  6. 1 tsp prepared mustard

  7. 3 TBS vinegar

  8. 8 cherry tomatoes cut in half


Add all ingredients to warm rice.  Let stand to marry flavours.  Serve warm or cold.

Keeps in the fridge for several days (covered).


Variations:

Add cooked salad shrimp, chicken cubes, tuna, salmon, diced ham, peas, vegetables or olives.
