Garlic Peri-Peri Marinade


If you need an easy marinade with a slight kick for chicken, turkey, pork, or lamb, give this one a try.  It also works well with a marinade injector if you want to shoot up your bird.


  1. Garlic Peri-Peri Sauce (such as Zulu-Zulu, Nando’s, or Wildly Delicious)

  2. white wine (or apple juice)


Combine equal parts of the Peri-Peri sauce and white wine. 

Place meat in a shallow dish or re-sealable bag. 

Pour marinade over meat and turn to cover well. 

Allow to marinate in the refrigerator two hours to overnight, turning occasionally.

Remove meat from marinade.  Discard the marinade or reserve it, brining it to a strong simmer over medium-high heat for 5 mins. to kill any bacteria. 


If you plan to use the reserved marinade, first bring it to a boil in a saucepan over medium high heat.
