Hot Date with a Pig
Bacon Wrapped Dates (or Hot Date with a Pig)
from Chile Pepper Magazine
•12 large dried Medjool dates
•6 oz (170gr) Fontina cheese (you could substitute Gruyere, Emmental, or Oka)
•6 slices smoked bacon, cut in half lengthwise
•4 pickled jalapeños, sliced in thirds lengthwise

Preheat oven to 350°F/176°C. Place the bacon on a papered sheet pan and bake 12 minutes or until cooked but limp.
Insert a chopstick into the bottom of each date and carefully push out the pit. Set aside.
Cut the cheese into ¼ inch slices, 1 inch long. Stuff a piece of cheese and a strip of jalapeño into the centre of each date. Wrap each date with a slice of cooked bacon and secure with a toothpick. Line a baking sheet with parchment paper and place the dates on it, bacon seam down. Bake for approximately 10 minutes or until the cheese starts to melt.

Makes 12 bites. Serve with a nut brown ale.
